I'm not sure what all the factors are that can affect supply -- but I'm sure that it's more than just demand. Stress, low fluid intake, and lack of sleep really seem to affect me sometimes. I'm down to once a day just before bed w/ Kaity and she is SO busy that she only will nurse for like 5 minutes at the most on each side. Its kinda sad because she is our last, but at the same time I really can't wait to get done and throw away my nursing bras!!
